Description
Tree: Part of the Eucalyptus species, with white flowers.
Location: Yathroo, Western Australia.
Colour: Darker in comparison to other honeys.
Flavour profile: Dark, rich, full-bodied, with caramel or treacle tones making it very different to other native Western Australian honeys.
Flowers: Approximately December to February.
Rate of production: Can be scarce because it only flowers bi-annually and may not produce enough nectar to ensure a honey yield.
Benefits: High in antioxidants and minerals.
Total Antimicrobial Activity of the current batch: TA 35+ (see Chem Centre certificate) on an established beneficial ratings scale ranging between TA 10+ and TA 35+, therefore, it has exceptional potential bacteria and fungal killing properties.
